This will make an egg salad fan out of anyone. As with all these recipes, ingredients matter. Even the smoked salt I recommend is worth tracking down. I use cherry smoked salt.
- 12 boiled eggs, peeled and chopped
- 1/2 cup light mayonnaise
- 1 Tbsp chopped fresh tarragon leaves
- 1 Tbsp finely chopped shallot
- 1 Tbsp french dijon mustard
- Watercress
- Cherry tomatoes, halved (I buy the ones at Costco, the assorted small tomatoes)
- Cherry smoked sea salt (I buy San Fransisco Salt Company salt, it’s on Amazon Prime even! See below.)
Mix all ingredients together. Serve on toasted Sara Lee Delightful bread (add 1 pt per slice) or serve on endive leaves with tomatoes and watercress. Dust with smoked sea salt.
