Egg Salad

This will make an egg salad fan out of anyone.  As with all these recipes, ingredients matter.  Even the smoked salt I recommend is worth tracking down.  I use cherry smoked salt.

  • 12 boiled eggs, peeled and chopped
  • 1/2 cup light mayonnaise
  • 1 Tbsp chopped fresh tarragon leaves
  • 1 Tbsp finely chopped shallot
  • 1 Tbsp french dijon mustard
  • Watercress
  • Cherry tomatoes, halved (I buy the ones at Costco, the assorted small tomatoes)
  • Cherry smoked sea salt (I buy San Fransisco Salt Company salt, it’s on Amazon Prime even! See below.)

Mix all ingredients together. Serve on toasted Sara Lee Delightful bread (add 1 pt per slice) or serve on endive leaves with tomatoes and watercress.  Dust with smoked sea salt. 71NXcb0PsxL._SX522_
