I feel St. Patrick’s Day was stolen from me this year. It’s not like I make big plans for St. Patty’s but I usually take time to make something Irish to celebrate that part of my heritage. I realized the rest of you missed out on your Gaelic Feast when I saw Costco basically giving away corned beef this week.
Well, I love Rueben sandwiches. Along with the cold Spring this year, and general need for comfort food at this time, I thought…Reuben Casserole.
- 6 slices of rye bread
- 1 lb corned beef, chopped
- 2 cups sauerkraut (also at Costco)
- 2 cups Swiss cheese, shredded
- 8 oz Gruyere cheese, pulsed in a processor
- 2 tsp caraway seeds
- 1 cup dill pickles, chopped
- 1 cup milk
- 3 eggs
- 1/3 cup thousand island dressing
- 1/4 cup yellow mustard
- 1/2 lb golden potatoes, diced
- 1 onion, diced
- 2 tbsp butter, melted
- Preheat oven to 350F. Butter a large baking dish. Cut four pieces of the rye bread into 1 inch pieces and spread along the bottom of the buttered dish. Place the rest of the bread into a food processor and pulse into breadcrumbs, set those aside.
- Sauté the potatoes and onions in a medium high skillet with 1 tbsp of olive oil along with salt and pepper until golden brown. Set aside
- Cover bread pieces with 1/2 of the corned beef.
- Drain the sauerkraut. Place that on top of the beef, then place the pickles on top of the kraut. Sprinkle on the caraway seeds. Top with swiss cheese
- Now add the rest of the corned beef, top with the potato mixture and top with the Gruyere cheese.
- Beat the eggs, milk, dressing and mustard together. Pour over the entire dish.
- Finally cover with the rye breadcrumbs and pour butter over the breadcrumbs.
- Cover with foil and bake for 45 minute. Left rest for 5 minutes then serve.
If your Costco corned beef is 3 lbs like the one I got, you can triple the recipe, like I did!
