Reuben Casserole

I feel St. Patrick’s Day was stolen from me this year. It’s not like I make big plans for St. Patty’s but I usually take time to make something Irish to celebrate that part of my heritage. I realized the rest of you missed out on your Gaelic Feast when I saw Costco basically giving away corned beef this week.

Well, I love Rueben sandwiches. Along with the cold Spring this year, and general need for comfort food at this time, I thought…Reuben Casserole.

  • 6 slices of rye bread
  • 1 lb corned beef, chopped
  • 2 cups sauerkraut (also at Costco)
  • 2 cups Swiss cheese, shredded
  • 8 oz Gruyere cheese, pulsed in a processor
  • 2 tsp caraway seeds
  • 1 cup dill pickles, chopped
  • 1 cup milk
  • 3 eggs
  • 1/3 cup thousand island dressing
  • 1/4 cup yellow mustard
  • 1/2 lb golden potatoes, diced
  • 1 onion, diced
  • 2 tbsp butter, melted
  1. Preheat oven to 350F. Butter a large baking dish. Cut four pieces of the rye bread into 1 inch pieces and spread along the bottom of the buttered dish. Place the rest of the bread into a food processor and pulse into breadcrumbs, set those aside.
  2. Sauté the potatoes and onions in a medium high skillet with 1 tbsp of olive oil along with salt and pepper until golden brown. Set aside
  3. Cover bread pieces with 1/2 of the corned beef.
  4. Drain the sauerkraut. Place that on top of the beef, then place the pickles on top of the kraut. Sprinkle on the caraway seeds. Top with swiss cheese
  5. Now add the rest of the corned beef, top with the potato mixture and top with the Gruyere cheese.
  6. Beat the eggs, milk, dressing and mustard together. Pour over the entire dish.
  7. Finally cover with the rye breadcrumbs and pour butter over the breadcrumbs.
  8. Cover with foil and bake for 45 minute. Left rest for 5 minutes then serve.

If your Costco corned beef is 3 lbs like the one I got, you can triple the recipe, like I did!
