
Well, it’s a new year and Weight Watchers has new programs. And no, your eyes are not deceiving you…whole wheat pasta is zero points on the Purple food plan. So that means the year is starting with Pasta Carbonara!
- 12 oz whole wheat spaghetti (3/4 of the box)
- 3 strips turkey bacon
- 1 clove garlic, minced
- 2 eggs plus two more egg yolks
- 5 T Parmesan cheese
- 12 oz bag of frozen peas
Get a pot of salted water boiling.
Cook the bacon in a skillet over medium heat. Turn often as turkey bacon has so little fat it can burn easily. Remove chop into 1/2 inch pieces. Put the garlic into the skillet and turn off the heat.
Toss the pasta in the boiling water.
Microwave the peas in their bag. When cooked, toss in the skillet with the garlic over low heat.
Combine the eggs and egg yolks and cheese, along with salt and pepper.
Drain the pasta and place into a large bowl. Immediately, while the pasta is hot, slowly add the egg/cheese mixture and mix with tongs. The heat of the pasta will “cook” the egg mixture into a creamy sauce.
Add the bacon and peas mixture and serve with salt and lots of fresh cracked pepper (as long as you love pepper!).
