Apple and Ham Omelette

This may not sound right up your alley. Actually, it may just sound flat out wrong. But everyone who’s tried these has loved them.  So be bold. You can do this!

  • Granny Smith green apple, peeled, cored and sliced
  • 1 Tbsp shallot, chopped
  • 1 tsp Stevia
  • Butter cooking spray
  • 3 egg whites
  • 2 oz lean ham, chopped
  • 2 tsp Goat cheese

Spray your pan with butter cooking spray and sauté the shallots for 2 mintues. Add the apple and Stevia and brown the apples on medium high for 4-5 minutes.  Remove the apple mixture from the pan and keep for later.

Re-spray the pan, heat on high heat and add the egg whites. Place ham, apple mixture and cheese in the center of the egg whites (if you have fresh thyme add a few leaves at this point as well).

When the sides without mixture are close to being fully cooked, old one third over the center, covering the mixture.  Tilt the pan toward the other side and fold the folds onto the other third (or simply fold in half!).

And because you only have 1 point each for the egg whites, ham and cheese, you’re boldness have given you a THREE POINT breakfast!
