Sweet Potato Omelette

If you’re on Weight Watchers for any amount of time, you’re going to need to add a few (dozen) omelette ideas. Here’s one that’s been a big hit.

  • 1 large sweet potato, chopped and roasted
  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 1 can white beans
  • 1 cup cooked white or brown instant rice
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1/2 tsp cayenne pepper for a little kick

Preheat the oven to 350F.  Toss the chopped sweet potato in some butter flavored Pam and spread onto a baking sheet.  Roast the the potato pieces for 20-25 minutes until they begin to brown.Potato Omelette.jpg

In the meantime, sauté the onions in the olive oil. Add the seasoning, beans, rice and the potatoes when they come out of the oven.

That’s it!  Add the filling to an egg white omelette with a little fresh ground pepper and dust with salt when complete.  Serve with salsa and/or avocado.  1/2 cup of filling is two WW Smart Points.
