Shrimp with Stuff

I buy a bag of raw shrimp at Costco when I make The Hubby Chef Seafood Stew and I had half of the bag left over in the freezer when I remembered….shrimp is practically free for people on weight watchers.

I put a sweet potato in the microwave and starting throwing stuff in the pan.  Both were done about the same time.  Severed it on top of half a sweet potato and man, was this good!

  • 1 tbsp olive oil
  • 1 tsp garlic, minced
  • pinch of dried thyme leaves
  • pinch of dried oregano leaves
  • pinch of paprika
  • 1 tbsp shallot, chopped
  • 1/2 pound of sliced white or brown mushrooms
  • 1 tbsp tomato paste
  • 1 lb raw shrimp
  • 12 cherry tomatoes, halved or quartered depending on size
  • 1/2 cup vermouth (use white wine if you don’t have vermouth.  This is not an option.  The dish needs one or the other.)
  • 1/2 cup chicken broth
  • Juice of one lemon

Heat the oil and sauté the first 6 ingredients.  When you have a good browning of the mushrooms, garlic and shallot, add half of the vermouth and toss.  Now add the tomato paste and raw shrimp.  When the liquid begins to thicken and/or evaporate, add the rest of the vermouth and the chicken broth.  Simmer and toss for 5-6 minutes until the shrimp take on a nice pink hue.  Squeeze with lemon juice and salt and pepper to taste.

The dish is 1 WW Freestyle point for 16 shrimp and a good amount of sauce.  Goes great with a plain sweet potato (my wife’s half of the potato was 4 points).  I don’t count points myself but I had the other half of this tonight and I’d say this was a helluva way to eat 5 points!
