Chicken Salad

I love turkey sandwiches with cranberry sauce.  Tastes like fall, or the delicious turkey sandwiches Pret-A-Manger makes (started in London and now in Boston, D.C., New York, Chicago, Paris, Dubai and I’m sure a few other places.  Without a doubt, one of my favorite eateries anywhere www.pret.com.) Anyway, I wanted to make a chicken salad sandwich for my wife on her diet and I thought I’d put cranberry sauce on it to get that Pret feeling….but cranberry sauce is 6 points per serving.  And I had some cherries lying around…so here’s a quick cranberry/cherry relish that fits the bill.

  • chicken salad 11 lb cooked chicken breast
  • 1/2 cup mayonnaise
  • 1 Tbsp dijon mustard
  • 1 Tbsp fresh parsley, chopped
  • 1 Tbsp fresh thyme, chopped
  • 2 celery stalks, chopped
  • 2 Persian cucumbers, chopped
  • 1 tsp salt
  • 1/2 tsp fresh ground pepper
  • 1 Tbsp olive oil

Combine all the ingredients into a bowl and blend.  Serve on Sara Lee toast or a toasted English muffin or half an avocado with a healthy heaping helping of crancherry relish.  A little smoked salt and enjoy.
