Why serve a $10-15 piece of filet without mushrooms when it’s so easy? And make a bunch. Mushrooms shrink like crazy!
- 2 lb mushrooms (Costco sells 2lb packages of white and brown mushrooms), halved or cut in thirds if large
- 2 Tbsp fresh parsley, chopped
- 1 Tbsp fresh thyme, chopped
- 2 Tbsp olive oil
- 1 Tbsp garlic, minced
- 1 cup white wine
Heat the oil and butter in a in a skillet on medium high heat. Add the garlic. Sauté for 2 minutes. Add the mushrooms and herbs. Toss occasionally until the mushrooms expel most of their water. You’ll see a good amount of liquid in the pan at this point. Add the wine and keep tossing every 30 seconds or so until the wine and water mixture turns think and begins to disappear. The mushrooms should take on a nice brown, caramelized look. You’re done!
