Easy, easy, easy side dish.
- 1 lb baby potatoes
- 2 cups cherry tomatoes, halved
- 2 Tbsp fresh basil, chopped
- 1 Tbsp olive oil
- 1 Tsp garlic, minced
- 1 Tsp smoked sea salt
- Ground pepper
Heat the oven to 350F.
Place the potatoes into a microwave-safe bowl and microwave for 5 minutes on high. Remove, then slice each potato in half.
Combine potatoes and the rest of the ingredients and toss in the bowl. Spread onto a baking sheet and bake for 20 minutes until tomatoes starts to get a little charred on the edges. Serve with any lean protein.
