Broiled Tomatoes

Here’s an easy side for any lean protein (we love it with a pan seared and oven broiled filet mignon!)

  • 4 beefsteak tomatoes, sliced vertically into thirds
  • 1/3 cup quality shredded parmesan cheese
  • 2 Tbsp fresh oregano, chopped
  • 1 Tsp garlic, minced
  • 1 Tsp cherry smoked or other sea salt
  • 1 Tbsp olive oil

Place the tomatoes into a dish and brush lightly with olive oil.  Place in an oven set to broil and broil for 8 minutes.  Meanwhile, combine the other ingredients and mix well in a bowl.tomato 1

Remove the tomatoes and spoon the mixture evenly onto the top of the tomatoes.  Return to the oven to broil for 5 more minutes.  Check every few minutes to make sure that you get a golden brown finish to the cheese and herb mixture.  Serve immediately.
