This has become one of the most popular healthy dishes in recent years. And as my wife says “Avocado is my new mayonnaise!”. And that’s a good thing. Plus this let me use some of the pickled onions I had made for The Hubby Chef Torta Ahogada!
- Sara Lee Delightful bread, toasted
- 1/4 of a medium avocado, sliced or smashed up in the combined method below
- Cherry tomatoes, cut into thirds
- Pickled onions (thinly sliced red onion is a ziplock bag with 1 tbsp olive oil, 1/2 cup red wine vinegar, 1 tsp kosher salt, 1 tbsp honey, a little fresh ground pepper and 2 tbsp of cilantro. Let the onions pickle in the fridge for at least an hour.)
- Radishes, thinly slashed
- Balsamic glaze
While the picture above is pretty, it’s much easier to eat this by combining all the ingredients as seen here and makes it great to take to work!

In the combined salad version I included diced English cucumber. You can also add fresh basil. Just place on toast or a toasted English muffin and enjoy!
