Breakfast Sandwich

I make this nearly every day.  When my wife started back on the Weight Watchers plan we looked for fast food options for when I travel on business.  McDonald’s Egg White Delight became an instant favorite for 7 WW points.  But I knew we could make a better one.

  • 1 Thomas’ English Muffin, well toasted (These separate easily to place in the toaster and like the package says, they have “nooks and crannies” that toast up perfectly. Costco sells these in four packs.)
  • 2 slices of Costco Kirkland Black Forest Ham (Any quality ham will work but this is really good ham.)
  • 1 slice of lite cheddar cheese (I get mine at Trader Joe’s and it’s only 1 point per slice)
  • 2 eggs
  • 3 sprays of I Can’t Believe It’s Not Butter spray
  • Dust with smoked sea salt

So, here’s the trick.  Our good friend Karen got us a Tupperware Egg Cooker (available on Amazon) and it makes this recipe take 2 minutes.  This little wonder cooks egg whites better than any pan and without oil or butter!

06024c6f75e1ac832987648b3efab819Throw the muffin in the toaster.  Put an egg white in each half of the egg cooker, cook for 2 min in your microwave.  Meanwhile, take your toasted muffin and build your sandwich with the other ingredients and top with a fluffy, round, perfect egg white.

5 WW Freestyle points or make on two slices of Sara Lee Delightful bread for a total of 4 points.

  1. This sounds great! I also love using the egg cooker. I love breakfast sandwiches. I think the protein really helps to carry one through the day so much more than cereal.
