Herb/Cheese Omelette

It’s protein time!  Breakfast has often been called the most important meal of the day.  If you ask anyone watching what they eat, this is especially true.  If you don’t get enough fuel to start your day and get your metabolism running, you’ll be in the McDonald’s drive thru before they start making fries for the day.

Here’s a simple omelette with a few extra touches to make it not just an everyday breakfast.

  • 1 Tsp olive oil
  • 3 egg whites
  • 2 slices of Kirkland Signature Black Forest Ham (sure, 2 oz of any ham will do, but this is seriously good ham! Plus you’ll need ham to make my version of McDonald’s Egg White Delight).
  • 1 Tsp fresh thyme leaves
  • 1 Tbsp soft goat cheese
  • 6-8 cherry tomatoes, halved (I get the cherry/heirloom tomato assortment at Costco)
  • Salt and ground pepper

Get the oil hot in the pan.  As we’re using egg whites you’ll want a fairly hot pan for fluffy eggs.  Whisk up the egg whites with a tiny bit of water and pour into the pan. Top with the rest of the ingredients in a line in the center of the egg mixture.  Add fresh ground pepper and salt to taste.

Fold one third of the egg to the center.  Tilt the pan to the side where the unfolded third is and use your spatula and gravity to fold the center section on top of the other third.  egg fold

Cook for 90 seconds and turn off the heat. Dust with a dash of good salt. Serve with toast sprayed with a little butter spray.

You can also do this with:

  • Lite cheddar and fresh tarragon
  • Good shredded or shaved parmesan and basil
  • Queso blanco and cilantro
  • Feta and spinach with greek seasoning
