I love a good beet salad. If there’s one on the menu, I’m ordering it. Here’s a simple one with ready to chop ingredients you can make in a few minutes. For example, instead of buying raw beets and having to roast them, I buy the pre-roasted beets at Costco. You get four sealed packets with 5 good-sized beets in each in a handy little box. Easy. And they keep for a long time in your fridge.
- 5 beets, chopped into bite size pieces
- 10 heirloom or cherry tomatoes, halved (again, Costco sells a package with a nice variety of small tomatoes.)
- 2 Tbsp goat cheese (Yep, you guessed it, Costco. Or Trader Joe’s. Or anywhere. I’ll post other recipes with goat cheese so you’ll get a chance to use it.)
- 1 cup Grapefruit segments (buy a large grapefruit and use half for the segments and juice both halves into a bowl to start your Hubby Chef Citrus Vinaigrette.)
- 1 Tbsp basil, chopped
- Micro greens (these are usually sold next to the fresh herbs at your grocer and shown in the picture below just above the tomatoes. If you can’t find them, arugula or other fresh greens will work.)
- 1/4 cup of The Hubby Chef Citrus Vinaigrette (Click here for recipe)
Start with a bed of greens. Place the beets, tomatoes and grapefruit on the bed of greens and top with cheese and basil.
I like to serve this with a simple pan sautéed fish filet or chicken breast.
