Birthday Meatloaf

This is a lower calorie, lower sodium version of the best meatloaf I’ve ever had (the Wayfare Tavern in San Francisco).  Mainly because that version is made of regular ground beef, pork, bacon and white bread.  So….yeah….this one is different.  But those changes along with a lower sugar and sodium version of the relish I make from Tyler Florence’s genius creation bring the same flavor profile to your plate, for 3 Smart Points per serving!

You’ll need to make the relish first.  And to turn your oven on to 350 F.

  • 1 lb 97% lean ground turkey
  • 2 Pieces Sara Lee Delightful bread, crusts removes and torn into small pieces
  • 1 Egg
  • 1 Tbsp fresh thyme leaves
  • 1 Tsp Smoked Salt
  • 1/2 Cup The Hubby Chef tomato relish
  • 1/4 Cup skim milk

Tear the bread and place in a large bowl and add the milk.  Add the rest of the ingredients and mix well with your hands.

Form into loaf and place in a casserole dish.  Pour a cup of relish on the top of the loaf, then place three pieces of turkey bacon atop the relish and bake for 85 minutes. Serve with relish.
