Tuna Salad

Anyone looking for high protein, low calorie options will find themselves making tuna fish salad.  And that’s usually where the excitement ends.  This one has become one of my wife’s favorites and is so easy to take to work to avoid those lousy fast food options out there.  Serve on Sara Lee Delightful toast (1 WW Smart Point) or great on a leaf of endive lettuce.

As with most of my recipes, using fresh, quality ingredients in what makes things tick.

Here we go.

  • 3 cups Kirkland Signature or other quality solid white albacore tuna (2 large cans)
  • 3 oz cornichons (very small french dill pickles, seriously find these!), chopped
  • 2 Tbsp capers, drained
  • 1 Tbsp french dijon mustard
  • 2 Tbsp fresh dill, chopped
  • 2 Tbsp fresh parsley, chopped
  • 1 Tbsp fresh tarragon, chopped
  • 2 Tbsp lemon juice
  • 1 Tsp sea salt
  • 1/4 Tsp fresh ground pepper
  • 1/2 cup light mayonnaise

Drain tuna fish and add to bowl with all other ingredients.  Blend and serve.
