This is the base for my favorite meatloaf recipe ever (The Hubby Chef’s Birthday Meatloaf). Ten years ago I had Tyler Florence’s meatloaf at his legendary San Fransisco flagship restaurant, The Wayfare Tavern. All hail, Tyler Florence! This is a low sugar, low sodium version of his wonderful relish (1 WW Smart Point per 1/2 cup!)
This recipe looks like it has a LOT of chopping, but I use my food processor for this one. The vegetables all combine to a wonderment of mush anyway, and trust me that’s a good thing. Make sure to use fresh tomatoes. Canned will make this too mushy, and that’s bad.
Last comment. I always double this recipe even thought below is a standard size that will make 4 cups. I use tons of if in my meatloaf and it’s fantastic as a sauce or a baked-on topping for fish, chicken or lean pork.
- 1 Tbsp Olive oil
- 1 Onion, medium, quartered and into the food processor
- 1 Bay leaf
- 2 Cloves of garlic
- 8 Roma tomatoes, seeded as best you can on their way into the processor
- 1 Yellow sweet bell pepper, cored, seeded and quartered, then into the processor
- 1 Red sweet bell pepper, cored, seeded and quartered, then into the processor
- 1/2 Cup of parsley
- 12 oz Ketchup, Low sugar/low sodium
- 1 Tbsp Worcestershire sauce (you can also use A1 for a little more kick)
I do the veggies in stages in the processor. Onions first with the garlic and into the large sauté pan with the olive oil and bay leaf to cook for 5 minutes.
Process/chop the peppers then add the onion mixture. Cook for 5 minutes. You can use all red bell pepper if you choose, but the yellow and orange that are often available add a little pop of color.

Now, add the tomatoes after chopping them in the processor and the parsley. Cook for 5 more minutes.
Lastly, add the ketchup and Worcestershire and mix well. Simmer for 10 minutes then remove from heat. When cooled, place in storage containers for later use or get right to it making your meatloaf!
